• Preparation time 30 minutes
• Cooking time 15 minutes

Ingredients

• 1 kg of clams
• 300 g of spaghetti
• 100 ml of white wine
• chili
• oil
• garlic
• pepper
• salt

Preparation

NB The preparation time is approximately thirty minutes, but consider the necessary soaking time to remove sand.
The secret to the success of this pasta dish is the choice of ingredients and the correct cleaning of the clams.
Favorites of the fresh clams, which you will have to let rest at least one night in cold water and with the correct salt ratio (70 ml of salt per liter of water), even better in seawater. This time in the water will ensure the clams are thoroughly cleaned, but they should still be checked before cooking. Rinse them under running water.

1

Before preparing the spaghetti with clams, purge the clams in seawater or cold, salted water for at least 12 hours. After this time, drain them and rinse them again with cold water. Tap the shells on a flat surface to make sure there's no sand left. Place the clams in a pan with the garlic and white wine over high heat, let the alcohol evaporate, then cover with a lid until the clams are fully open. This will take about 3 minutes.

2

Brown the garlic with a little chili pepper over low heat, add the clams and the previously filtered water, and cook for a few minutes.
Finely chop the parsley. Cook the spaghetti in salted water until al dente, or they'll overcook in the pan.

3

Drain the spaghetti and add it to the pan with the clams, mix for a few seconds, serve piping hot with a sprinkle of pepper and parsley.
